Veggie Stir-Fry with Tofu

A quick, colorful, and healthy stir-fry with tofu, broccoli, bell peppers, and a savory garlic-soy sauce. Perfect for a weeknight dinner.

Ingredients:

  • 200g firm tofu, cubed
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp ginger, minced
  • Salt & pepper to taste

Instructions:

  1. Heat sesame oil in a skillet or wok. Sauté garlic and ginger for 1 minute.
  2. Add tofu cubes, cook until golden on all sides. Remove and set aside.
  3. Add broccoli, bell pepper, and carrot, stir-fry 5–6 minutes until tender-crisp.
  4. Return tofu, add soy sauce, toss to coat. Serve hot over rice or noodles.

Tips & Variations:

  • Add cashews or sesame seeds for extra crunch.
  • Substitute tofu with tempeh or seitan.
  • Use tamari for gluten-free version.
