Thai Peanut Noodle Bowl

A vibrant, flavor-packed noodle bowl tossed in a creamy peanut sauce with fresh veggies. This lunch is quick, colorful, and addictive!

Ingredients:

  • 200g rice noodles
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • ½ cucumber, julienned
  • ¼ cup roasted peanuts
  • 2 tbsp soy sauce
  • 2 tbsp peanut butter
  • 1 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp sriracha
  • Fresh cilantro for garnish

Instructions:

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk soy sauce, peanut butter, lime juice, honey, and sriracha.
  3. Toss noodles with veggies and peanut sauce until well coated.
  4. Top with peanuts and cilantro. Serve immediately.

Tips & Variations:

  • Add grilled chicken or tofu for extra protein.
  • Adjust spice by adding more or less sriracha.
