A low-carb twist on a classic favorite—this cauliflower fried rice is loaded with flavor but keeps carbs in check. Perfect for quick weeknight dinners.

Ingredients:

  • 1 medium cauliflower, grated into rice-like pieces
  • 2 eggs, lightly beaten
  • ½ cup diced chicken or shrimp (optional)
  • ½ cup peas and carrots
  • 2 tbsp soy sauce (or coconut aminos for keto)
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 green onion, chopped

Instructions:

  1. Heat sesame oil in a skillet, sauté garlic for 1 minute.
  2. Add cauliflower rice, peas, and carrots. Cook 5–6 minutes.
  3. Push to the side, scramble eggs, then mix in.
  4. Add soy sauce and optional chicken/shrimp. Stir well.
  5. Garnish with green onions, serve hot.
