Hearty Beef & Vegetable Stew

A rich and comforting dinner perfect for chilly nights—this beef stew is slow-cooked with tender beef, hearty vegetables, and flavorful broth.

Ingredients:

  • 500g beef chuck, cubed
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 2 carrots, diced
  • 2 potatoes, cubed
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • Salt & pepper to taste

Instructions:

  1. Coat beef cubes with flour, season with salt & pepper.
  2. Brown beef in olive oil, remove, and set aside.
  3. Add onion, carrots, and celery. Cook until soft.
  4. Stir in tomato paste, then add beef back with broth and bay leaves.
  5. Simmer covered for 1.5–2 hours until beef is tender.
  6. Add potatoes, cook 20 more minutes. Serve hot.

Tips & Variations:

  • Add peas or green beans at the end.
  • Use red wine for richer flavor.
  • Swap beef with mushrooms for vegetarian version.
