Ingredients:

  • 2 chicken breasts
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 cup quinoa, cooked
  • 1 cucumber, diced
  • 1 tomato, diced
  • 2 tbsp parsley, chopped
  • Salt & pepper to taste

Instructions:

  1. Marinate chicken in lemon juice, olive oil, garlic, salt, and pepper for 30 mins.
  2. Grill chicken until cooked through, about 6–7 mins per side.
  3. Toss quinoa with cucumber, tomato, parsley, olive oil, and lemon juice.
