Creamy Spinach & Mushroom Pasta

This vegetarian pasta combines earthy mushrooms, fresh spinach, and a creamy garlic sauce for a hearty yet simple dinner.

Ingredients:

  • 250g penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 cups spinach
  • 1 cup cream
  • ½ cup parmesan cheese
  • Salt & pepper to taste

Instructions:

  1. Cook pasta according to package directions. Drain, set aside.
  2. Heat olive oil, sauté garlic and mushrooms until golden.
  3. Add cream and simmer until slightly thickened.
  4. Stir in spinach until wilted.
  5. Toss pasta with sauce, sprinkle parmesan on top.
